ALL THE BLACK TEAS LISTED HERE ARE OF SPECIAL SEASONAL QUALITY MADE SPECIFICALLY FOR US AT THE INDIVIDUAL ESTATE FACTORIES:

PESTICIDES RESIDUES:
There is considerable concern by many consumers about pesticide levels in food products. Ceylon teas are controlled by special regulations on restriction in the use of pesticides. There is a special regulatory mechanism in place to register acceptable pesticides for import and then a licensing process for their use only when bad disease outbreaks have been notified and cleared for treatment. As a result of this strict policy Ceylon teas were declared the cleanest teas in the world with regard to spray chemical residues in 1997 and that status continues to this day. Some background to this can be seen in the 'NEWS' section and also in the 'Health' section of this website.

BLACK OR GREEN TEA for HEALTH ?:
Up to now it has been proposed that Green teas are the healthy option for you. This view is outdated and superseded by years of research into Black teas. Both teas possess these health advantages as long as they are of the Camellia Sinensis tea bush. This does not relate to Robibos, Mate herbal teas or fruit teas, none of these named teas are from the Camellia Sinensis bush. See the Health section for full information and the booklet on sale below. Consumers should however understand that these health promoting factors can be degraded under certain conditions in manufacture and where teas are exposed to air as in some re-packing situations as tea is extremely hygroscopic.

TEA FOR HEALTH By Dr. Tissa Amarakoon

In the heading above is a bar called: 'More Information B1 please click on this for more information.

Summary of the latest researches into the properties of Green & Black teas from around the world and in particular the work by Dr. Amarakoon of the Tea Research Institute (TRI) of Sri Lanka (Ceylon).
Interestingly it shows that both Green and Black teas have equal health giving properties and benefits.
This is important as up to now, Green tea has been trumpeted as the health giving tea. Black tea has now been put under the microscope as research has progressed on all teas. However please note that this research is only applicable to 'CAMELLIA SINENSIS' or true tea.
There are some provisos which react on and degenerate these properties. Firstly method of manufacture, time of year for manufacture and how the teas are packed or stored.
Dry weather seasonal teas have high levels of theaflavins and it is important to seal these in straight from manufacture before they can be degraded.

I recommend this booklet for the clear way in which it explains the subject.
This item is again repeated and shown in GIFTS under Miscellaneous items 'Interesting Books on Tea'.

           Uva District (North):
Winner of GOLD at the London 2006 International Annual Taste Awards
Winner of SILVER at the London 2005 International Annual Taste Awards
Winner of SILVER at the London 2002 International Annual Taste Awards

Situated at the edge of the famous Uva Malwatta valley. A light coloured liquor with a high level of flavour from the hot drying wind, is aromatic and yet has a smoothness. The connoisseur's delight. Indian Darjeeling:
Winner of BRONZE at the 2005 London International Annual Taste Awards
A second flush single estate seasonal tea of superb quality. It has a distinctive bright yellow liquor associated with high elevation and the flavour of muscatel and a fragrance of new mown hay.
This tea has had to be subjected to and has passed the stringent pesticide residue testing required by the Ceylon Tea Boards requirements as all chemical spraying in Ceylon (Sri Lanka) is controlled by a special statute.

Indian Assam:
Winner of SILVER at the 2006 London International Annual Taste Awards
A specially selected single estate 2nd. Flush tea grown in the renowned Brahamaputra valley. One of the main criteria in selection was that the estate must be using the old traditional twist rollers rather than the modern CTC cutters in order to get back to the original concept of an Assam tea.
The liquor is a full bodied one with superb depth of colour and a distinctive maltiness.

SPICED TEA or CHAI

A specially prepared blending with a tea to balance the inclusion of six cut fresh spices layered within the tea. This produces a wonderfully aromatic warming brew. we advise the use of a strainer when pouring the liquor into a cup to avoid any of the pieces of spice passing into the cup.

Jasmine Blossoms:
Here we have added the natural Jasmine blossoms to the specially selected GREEN tea by layering the blossoms over the tea and then mixing. The liquor produces a delicate but highly aromatic brew which is ideal drunk on its own after a meal.

Green Kandyan Blooms:
Winner of SILVER at the London 2001 International Annual Taste Awards
The bud and only one tender leaf were plucked by 12 selected pluckers, early in the morning before sunrise. The special open rolling manufacture allows the leaf to unfurl like a bloom once brewed. For best effect brew in a glass receptical. Brew at 80 - 90 o degrees C. (176 - 194 F).
It is interesting to brew this tea in a glass receptacle such a suitable glass or glass pot
