ALL THE BLACK TEAS LISTED HERE ARE OF SPECIAL SEASONAL QUALITY MADE SPECIFICALLY FOR US AT THE INDIVIDUAL ESTATE FACTORIES:

PESTICIDES RESIDUES:
There is considerable concern by many consumers about pesticide levels in food products. Ceylon teas are controlled by special regulations on restriction in the use of pesticides. There is a special regulatory mechanism in place to register acceptable pesticides for import and then a licensing process for their use only when bad disease outbreaks have been notified and cleared for treatment. As a result of this strict policy Ceylon teas were declared the cleanest teas in the world with regard to spray chemical residues in 1997 and that status continues to this day. Some background to this can be seen in the 'NEWS' section and also in the 'Health' section of this website.

BLACK OR GREEN TEA for HEALTH ?:
Up to now it has been proposed that Green teas are the healthy option for you. This view is outdated and superseded by years of research into Black teas. Both teas possess these health advantages as long as they are of the Camellia Sinensis tea bush. This does not relate to Robibos, Mate herbal teas or fruit teas, none of these named teas are from the Camellia Sinensis bush. See the Health section for full information and the booklet on sale below. Consumers should however understand that these health promoting factors can be degraded under certain conditions in manufacture and where teas are exposed to air as in some re-packing situations as tea is extremely hygroscopic.

Please note that each heading bar has an underlined note saying 'More information'. If you wish to view the packing of these items please click on 'MORE INFORMATION' and you will be taken to a back page with photographs of the packs.

You may wish to send friends or relatives items as a gift. If so please enter the delivery address in the form of the receiver & a card with your own message can be included for an extra charge of £1.50p. If you require this service please confirm this in the message line at the end of the entry form together with your message.

TEA FOR HEALTH By Dr. Tissa Amarakoon

In the heading above is a bar called: 'More Information B1 please click on this for more information.

Summary of the latest researches into the properties of Green & Black teas from around the world and in particular the work by Dr. Amarakoon of the Tea Research Institute (TRI) of Sri Lanka (Ceylon).
Interestingly it shows that both Green and Black teas have equal health giving properties and benefits.
This is important as up to now, Green tea has been trumpeted as the health giving tea. Black tea has now been put under the microscope as research has progressed on all teas. However please note that this research is only applicable to 'CAMELLIA SINENSIS' or true tea.
There are some provisos which react on and degenerate these properties. Firstly method of manufacture, time of year for manufacture and how the teas are packed or stored.
Dry weather seasonal teas have high levels of theaflavins and it is important to seal these in straight from manufacture before they can be degraded.

I recommend this booklet for the clear way in which it explains the subject.
This item is again repeated and shown in GIFTS under Miscellaneous items 'Interesting Books on Tea'.

UVA - F.B.O.P.
I am afraid I must restrict orders to 2 cartons per person as the amount we were able to make was very small.

This manufacture run was made at a single estate in the UVA area and was seen by us to be a sample of extreme Quality that only comes in certain years. The estate agreed to clean and refine down this particular grade which came to a total of some 30 kgs in all. With the magical differential in the hygrometer readings at night it was possible to conserve the very heavy volatile oils that are expressed from the leaf cells after a very long period of dry weather at this high elevation and which are so essential to such quality teas as this. The Cachan wind came in as quite a brisk chill over the fields which helped with to give us an almost ideal hygrometer reading.

To taste a special tea like this and allow the superb flavour to linger I recommend that you brew and taste it without milk or any other addition such as a slice of lemon. Brew it ideally with a filtered water, especially in poor water quality areas. Do not mix previously boiled water with fresh water, take the water up to boiling point and then pour into the receptacle with leaf, after about 30 seconds stir several times and then allow the liquor to brew for 3 - 5 minutes. 5 minutes will give a full flavour.

I shall be releasing just a few special 50 g white wood boxes and 125g cartons to Mail Order on this site, the rest will be released to my trade clients.

The liquor produces a light liquoring champagne type tea with a high level of aromatic flavour which is superbly balanced. It should be sipped and savoured without milk.

NUWARA ELIYA - B.O.P
Winner of GOLD at the London 2004 annual Taste Awards

This manufacture run was made at an estate in this area and was snapped up by us as being an example of extreme high quality representing the special flavour that we look for in this Western Quality Season. The 2004 season was superb and this 2004 limited edition is restricted to 36 boxes. With the magical 15 degrees differential in the hygrometer readings at night it was possible to conserve the very heavy volatile oils that are expressed from the leaf cells after a very long period of dry weather at this high elevation and which are so essential to such quality teas as this.
Printed on the box is an explanation as to how you might try to introduce your palate to taste a special tea like this and how that flavour may linger. It is recommended that this type of tasting is carried out without milk or any other additive.
The liquor produces a light liquoring champagne type tea with a high level of aromatic flavour. It should be sipped and savoured with or after a meal without milk.

DELLAWA FF Ex Sp - Special Manufacture

A very specialist type of leaf produced at an estate in an area where the tea bushes receive very high photosynthesis for their leaves combined with hot and humid conditions which give the final fired leaf the classic black sheen. This area also allows the rolling pattern in the factory to be relaxed and a slower more gentle rolling can be carried out which produces a very high level of silvery buds. The buds are layered throughout the black leaf giving a stripey effect.
This tea gives an excellent lighter liquor and a brew with a dry slightly sweet mellow taste and dry length.

SILVER  TIPS   -  WHITE  TEA or SILVER NEEDLES
2006 Gold Taste Award winner in London
This tea equates to the Chinese YIN  ZHEN White tea since only the best fat buds are selected by the pluckers. Always an expensive tea to make because of the very high labour costs & low yield per bush.
The fragile buds require a box for protection. These buds were selected by six specially selected pluckers from a specially grown block of a particular V.P. clone of bush for this purpose. The special clone that this tea comes from produces larger, fatter buds than the normal standard field bush which may itself come from commercial clones such as the 2,000 series. There are now many cheaper commercial white teas on the market which use buds and leaves from the standard field bush. Plucked early in the morning. The liquor is a light apple green in colour, with a touch of sweetness. A light aromatic brew. It is claimed to have no caffeine. No milk. Brew at 80 - 90 degrees C.

WESTERN NEW SEASON   B.O.P. Grade

Winner of SILVER at the London 2004 annual Taste Awards

Not far from Brunswick and yet we enter this golden valley and the tea changes yet again. Produces a wonderful aromatic flavoury tea with an unusual yellowy green liquor. The liquor possesses the typical seasonal character of this special area and can be drunk with or without milk. Reducing the amount of leaf used for brewing produces a superb lighter liquor and emphasises a light aroma.
