Characteristics
: These packs have been developed
for use as a starter pack, giving the purchaser a selection of 3 x 125g
cartons in a range of districts and therefore flavour types. They also double
as very acceptable gift packs.
Opposite is a photograph showing the outer packing carton, back and front view. The front view shows the three oval transparent windows and the rear view contains the three descriptions of the liquor of the enclosed teas.

Dickoya District:
Winner of SILVER at the London 2004 Annual Taste Awards
Not far from Brunswick and yet we enter this golden valley and the tea changes
yet again. Produces a wonderful aromatic flavoury tea with an unusual yellowy
green liquor. The liquor possesses the typical seasonal character of this special
area which exhibits an aroma.
Uva Seasonal Dark Liquor - Uva District
Some of you maybe customers of my St. James FBOP. Uva is a tricky district
where one or two estates have been promoted internationally and command very
high prices indeed. In our opionion quality has varied for a number of reasons
and we have therefore taken the decision to pick out the estate which is an
equivalent of St.James with a darker liquor colour but which is in our opinion
the best quality tea in that season. The above may therefore be St. James or
another equivalent estate. It will always be a single estate
tea though.

No gold was awarded in 2001.
Made in the unique world famous Uva district season. We
have this manufactured after midnight for the coolness to develop the volatile
flavoury oils at this time. Produces a rounded liquor with some colour and a
delicate flowery flavour and aroma. Will balance milk if required. For my recommendations

Uva Seasonal Light Liquor FBOP
Uva District (North):
Some of you maybe customers of my Uva Highlands FBOP. Uva is a tricky district
where one or two estates have been promoted internationally and command very
high prices indeed. In our opionion quality has varied for a number of reasons
and we have therefore taken the decision to pick out the estate which is an
equivalent of Uva Highlands with a light liquor colour but which is in our opinion
the best quality tea in that season. The above may therefore be St. Uva Highlands
or another equivalent estate. It will always be a single estate tea though.
Uva Highlands FP - Winner of SILVER at the London 2002 Annual Taste Awards.
Situated at the edge of the famous Uva Malwatta valley. A light coloured liquor
with a high level of flavour from the hot drying wind, is aromatic and yet has
a smoothness. The connoisseur's delight. We do not recommend using milk with
this tea. A trio of classics which really epitomise the gulf between tea bags
and proper leaf teas.
Brewing: For black teas we recommend that the freshly drawn water is allowed to boil to the point of vibration when the first bubbles rise and then poured from the kettle swiftly and with a swirling action on to the leaf in the pot. To allow the kettle to proceed to the cut off click reduces the oxygen (life) in the water. Green leaf tea requires a lower temperature water at approximately 80 - 90 o C (176 - 194 F) and brewing for a shorter time e.g 1.5 to 2.5 minutes. Some green teas may require a longer time to suit some palates e.g. Silver Tips.
For teas with milk brew
for 3 - 5 minutes to your palate requirement. For teas to be drunk without milk
reduce the amount of leaf normally used for with milk. e.g. 1 level or heaped
spoon per 2 cup pot and brewed for 2.5 - 3.5 minutes will produce a lighter
liquor with accentuated flavour and aroma.
ICED TEA: Brew at double strength and pour into a glass
or glasses filled with ice.
