: These packs have been developed
for use as a starter pack, giving the purchaser a selection of 3 x 125g
cartons in a range of districts and therefore flavour types. They also double
as very acceptable gift packs.
Opposite is a photograph showing the outer packing carton, back and front view. The front view shows the three oval transparent windows and the rear view contains the three descriptions of the liquor of the enclosed teas.
Natural Bergamot Earl Grey FBOP: The balance of this award winning tea is derived from the special selection of leaf from two different single estates. To this is added the delicate Natural Bergamot oil which is carefully spread over the leaf by a turning action. This tea was awarded a gold award when it was first launched in 2000.
Lover' Leap FBOP: Lover's Leap: A classic high grown Ceylon well above 6,000 feet producing the light yellowy liquor associated with this elevation. Coming from the special season the manufacture was carried out in the cool of the night on a slightly faster rolling programme which has preserved the full flavour that the bushes produce at that time of year. This flavour produces a level of astringency which is the mark of quality together with the clarity of liquor.
Organic Biodynamic Iddalgashinna O.P. 1 Spl Green:
This is a community owned estate in the Eastern region of rolling mountains
an area that produces a special character to its teas. The estate rises over
a wide level of elevation and climbs to nearly 6,000 feet. The Biodynamic production
is unusual for tea production.
The liquor produces a light apricot coloured brew with a fresh peaty aroma and
flavour, but has been also described as a lightly spiced malty flavour.
Green tea types vary in their astringency and pungency levels. Therefore there
is no single recommendation for green teas. This tea is a softer type and with
the large open grade of leaf used the brew can be very light. I suggest that
the amount of leaf used need not be cut down very much and that the brewing
time can be virtually the same as for black teas.
Brewing: For black teas we recommend that the freshly drawn water is allowed to boil to the point of vibration when the first bubbles rise (point of boil) and then poured from the kettle swiftly and with a swirling action on to the leaf in the pot. To allow the kettle to proceed to the cut off click reduces the oxygen (life) in the water. Green leaf tea requires a lower temperature water at approximately 80 - 90 o C (176 - 194 F) and brewing for a shorter time e.g 1.5 to 2.5 minutes. Some green teas may require a longer time to suit some palates e.g. Silver Tips.
For teas
with milk brew for 3 - 5 minutes to your palate requirement. For teas to be
drunk without milk reduce the amount of leaf normally used for with milk. e.g.
1 level or heaped spoon per 2 cup pot and brewed for 2.5 - 3.5 minutes
will produce a lighter liquor with accentuated flavour and aroma.
ICED TEA: Brew at double strength and pour into a glass
or glasses filled with ice.
