Green  Kandyan  Blooms

This tea has been developed at a specialist green tea factory. The area around the factory is community owned and discipline of plucking is an aspect that is always of concern in such instances. However over the years this has been impressed on the family units and factory production is held in high regard. Normally plucking is stated to be to the bud and two leaves below. However planters know that this is not a total rule of thumb and that there are perfectly acceptable leaves one below this at times and the skill of the pluckers is to select as they hoover over the bushes. here they have been restricted to the bud and only one leaf as a rule of thumb and therefore only the most experienced pluckers were selected for the job. This restrictive plucking affects their bonus capability and income therefore they have to be compensated which always adds to the cost of production.

Leaf  Character:    12 experienced pluckers were selected for this project. They plucked early in the morning before sunrise whilst the field mist was still blanketing the bushes. The leaf was taken quickly to the factory and a special manufacture had been developed to create the intact effect that allows the leaf to open like a bloom on brewing with hot water.

Brewing:       As a green tea it is important to brew with water below boiling point 90 o C (194 F) Temperature. Do not boil and then allow to cool.  Leaf quantity will be to palate.
ICED TEA:    Brew at double strength with leaf, al;low to brew sufficiently and then pour into a glass filled with ice.
